Very close to the end, but it may actually only be the
beginning. It is true we are just about
done, but with the idea of continuing the extremely healthy eating it is still
up in the air whether we’ll be continuing this for a few more weeks, months or
years? (hopefully not years!). Breakfast
was quinoa and millet. I cooked 2 eggs
and put them over eggs—very very good.
Not much exciting happening through the day—although I did
feel good all day and into the night, we even went on a date night. I had leftovers from last night—quinoa over
salad mixed with eggs. I also made
(experimented with) chocolate lava cake for lunch—they actually did not turn
out too bad. 2 eggs, 2 droppers full of
stevia, ¾ cup almond flour, ¼ cup arrow root powder, ¼ teaspoon baking soda and
2 tablespoons cacao powder—cooked on 425 degrees F for about 7 – 8 minutes.
I even brought a piece to my wife at work—it wasn’t as good
re-heated but still very good. My wife
and I did go on a Fate Night (how I initially fat fingered it into my
phone). Went to a very good restaurant
called Zest in Salt Lake City. They had
a lot of good food choices and even some we could eat right now. There were some problems with the recipes straight
from the menu so the chef cooked up some special toppings and left a few
ingredients out we couldn’t have when she made some sauces for us—mmm, mmm,
good.
We have not been having enough date nights and it felt
really good to have one—we even made one more chocolate lava cake for tonight
(although I forgot how much stevia I originally added and didn’t add enough so
it wasn’t as good). Great day, Great
Night Great times.
